Tropical Strawberry Crush

Last year our family was blessed to go on a cruise and one of the stops was the Amalfi Coast in Italy. Here is a picture from our trip but it doesn’t do it justice.

During our time there we heard all about the lemons and how they made Limoncello from it. We didn’t get to visit the factory where they make it but I would have loved to do that. I was pregnant at that time so didn’t have the opportunity to taste it. It is also meant to be used in mixed drinks so it has been sitting and teasing me to come up with a recipe.

So as I racked my brain on what would be a fun Valentine’s day drink, this is the combination that came to me. It is freezing cold in Ontario so I really would love a tropical getaway. I figured if I could make a drink that tasted like a vacation, I was set.

Ingredients

Frozen Strawberries – 1 cup

Limoncello – 3 tablespoons

White sugar – 1 teaspoon

Coconut Milk – 1/2 cup

Put everything in a blender, blend to combine well. You may need to stop and use a spoon to push the ingredients down before you get it fully blended.

We were happy with the sugar content in this drink but if you want it sweeter you can add one more teaspoon of sugar. This has the texture of a slushie and needs to be served immediately.
