Firstly, let me give you some background to this drink! Last year our family was blessed to go on a cruise and one of the stops was the Amalfi Coast in Italy and below is a picture from our trip. The coast is gorgeous with natural beauties but also extremely expensive real estate holdings. I believe one of the houses was owned by JFK’s brother, not sure about that though. Anyways, when we visited the coast we were told that Limoncello was a special drink that was made from the lemons that grew there. The roads were laced with these beautiful lemon trees and it looked gorgeous and rather enticing. If you could bottle up summer I believe these lemons would be the main ingredient.
Limoncello is made from lemons, vodka and simple syrup.
We didn’t get to visit the factory where they make it but I would have loved to do that. I was pregnant at that time so didn’t have the opportunity to taste it. It is also meant to be used in mixed drinks so it has been sitting and teasing me to come up with a drink recipe.
I thought of this combination for Valentine’s Day and because it is freezing cold in Ontario, I really would love a tropical getaway. I figured if I could make a drink that tasted like a vacation, I was set. However, this drink is just perfect for any day and I can totally enjoy this on a warm summer day as some steaks get grilled in the backyard.
Frozen Strawberries – 1 cup
Limoncello – 3 tablespoons
White sugar – 1 teaspoon
Coconut Milk – 1/2 cup
Put everything in a blender, blend to combine well. You may need to stop and use a spoon to push the ingredients down before you get it fully blended.
We were happy with the sugar content in this drink but if you want it sweeter you can add one more teaspoon of sugar. Since this has the texture of a slushie it is best served immediately.
