Loaded Nachos

I love nachos and if I see it on a restaurant menu, I will order it for appetizers. Some of them make it well and some are mediocre. The real flavour lies in the taco meat and then the toppings. The freshness of the chips and the toppings matter too! So I figure if I love it so much why not just make it at home. And it was so simple to make!

Like I said the real flavour lies in the taco seasoning and so I make mine from scratch. You could obviously just use a store bought one but it is really not hard to make. You probably have all the ingredients in your spice cabinet already.

Preparation Time – 15 Minutes

Cook Time – 6 Minutes

Serves – 4

Tortilla Chips

Ground Beef – 1 lb

Tomatoes – 2 medium, diced

Onion – 1 small, diced

Cilantro – 1/2 a cup, chopped

Cheddar Cheese – 2 cups, grated

Pickled Jalapenos – As needed

Sour Cream – 1/2 cup

Taco Seasoning:

Chili powder – 1 1/2 Teaspoons

Garlic powder – 1/8 Teaspoon

Onion powder – 1/8 Teaspoon

Chilli Flakes – 1/8 Teaspoon

Oregano – 1/8 Teaspoon

Paprika – 1/4 Teaspoon

Ground Cumin – 1/4 Teaspoon

Salt – 1/2 Teaspoon

Black pepper – 1/2 Teaspoon

Preheat your oven to 350 degrees. Heat a skillet and add your ground beef and the taco seasoning, cook for about 7 to 8 minutes. Use your spoon to break the meat into small pieces and drain any excess fat. Line your baking tray with foil and spread tortilla chips to cover the tray, you can layer some chips over each other. Then using a spoon spread the taco meat all over and then follow with the cheese. Bake in the oven for 6 minutes or till the cheese is melted. Then top with the pickled jalapenos, tomatoes, onions, cilantro and sour cream. Serve immediately.

As I said, super simple and a huge crowd pleaser! If you want to make this healthier you can make it with ground chicken too. You could add guacamole too and usually we are all over our avocados but they aren’t ripe enough and we didn’t really miss it much. I hope you guys try this the next time you have a party or a movie night. It is delicious!!
