Spinach Apple Salad

I hear many of you are planning to eat healthy and want more recipes to achieve that in the New Year. I am working on some of these and a salad is the epitome of health but it also allows us so much room to play with different add ins. My favorite greens in a salad is spinach, if you don’t like spinach you could use romaine lettuce as well.

This salad is so simple and requires very minimal preparation. I also have the recipe to a vinaigrette as well which pairs really well with this salad. If you want to make a meal you could add some chicken breast to it as well. I used it as a side to a heavier meal so I kept it light and simple.

Preparation Time – 10 Minutes

Serves 2


Baby Spinach – 4 Cups

Cucumber – 1, sliced

Red Apple – 2, Sliced

Avocado – 1, Sliced

Toasted Almond Slivers – 1 Cup

Cheddar Cheese – 1 Cup, Diced

Combine all these ingredients in a large bowl with the vinaigrette and serve immediately.

Apple Cider Vinaigrette

Preparation Time – 5 Minutes


Olive oil – 1/4 Cup

Apple Cider Vinegar – 3 Tablespoons

Honey – 2 Teaspoons

Garlic Powder – 1/4 Teaspoon

Parsley – 1/2 Teaspoon

Pepper – 1/4 Teaspoon

Salt – 1/4 Teaspoon

Whisk well before using. Alternately, put it in mason jar and shake well.
