Chickpea Salad with a Creamy Dressing

The typical coleslaw is not my favorite among salads. Raw cabbage and the one dimensional texture, it is alright but I definitely do not go for seconds. My mom makes this coleslaw with a mixture of different vegetables. There is protein from the chickpeas, freshness from the cucumber and tomatoes, the crispness of the red onion and cabbage, sweetness from the craisins and the creamy dressing just brings it all together.

In reality you can substitute these vegetables with others that you prefer. The flavour profile is crunchy, sweet and creamy. For example, you can substitute the craisins with apples. So go nuts!

Preparation Time – 20 Minutes

Cook Time – 5 Minutes

Serves – 5- 6


Chickpeas – 1 (19 Oz) Can, drained and washed

Cucumber – 1, diced

Tomato – 1, diced

Cabbage – 2 Cups shredded

Craisins – 1 cup

Celery – 3 stalks, diced

Red Onion – Small, diced

Creamy Coleslaw Dressing

Combine all the ingredients with the dressing. Chill for a few hours before serving. Enjoy!
