Now that we are almost three months into the year, how has that eating healthy resolution gone for your guys? Personally, I have done terrible in some areas and good in some. One of the good things being this recipe for sheet pan roasted asparagus and sweet peppers!
I don’t want to dwell on the negative, ha ha! So here is what I was able to work on, firstly adding more fish into our diet and secondly, adding more vegetables. The hardest part about cooking for me is sometimes how complicated certain dishes can be and granted there is a time for them. Most of my meals I try and put some effort into but with having a little baby around keeps me on the run and away from the kitchen. Also, I wanted to have a vegetable side dish that requires minimal preparation which included me not having to stand over the stove.
This side dish requires very little fussing, take a sheet pan, put your vegetables and the mixture, bake it and voila!
Asparagus – 2 Lbs, washed and stemmed
Red Peppers – 2, sliced
Yellow Peppers – 1, sliced
Lemon Juice – 1 tablespoons
Parsley – 2 Teaspoons
Oregano – 1 Teaspoon
Garlic powder – 1 Teaspoon
Onion powder – 1 Teaspoon
Pepper – 1 Teaspoon
Salt – To Taste
Olive Oil – As Needed
Preheat oven to 350 degrees. Put the vegetables on the sheet pan. In a bowl combine all the other ingredients and pour over the vegetables. Using your hands rub the mixture over the vegetables.
Bake for 15 minutes and serve hot. These will yield you with some crunchy yet well cooked vegetables that will serve as a perfect side dish. I had these with my Lemon Garlic Pan Seared Salmon, another simple recipe that can be done on the stove top as these vegetables cook in the oven.
If you have never tried asparagus I suggest giving it a try! It is such an easy vegetable to prepare and also versatile. This vegetable is a good source of vitamin k, anti-inflammatory, antioxidant and also a great source of fibre. You can make them in the oven, or steam them and even throw them in pastas. Warning though, this vegetable will make your pee smell. Figured you may want to know that before you start getting worried.
And on that note, next time you are at the grocery store, grab some asparagus and make this sheet pan roasted asparagus and sweet peppers for dinner. Happy cooking!!
