Fried Rice – Better than take out!
My mommy friends asked for some kid-friendly recipes and my little niece seemed to enjoy this fried rice. You can always use the bare bones of this recipe and change up the protein source to whatever you prefer. Or you can just keep it vegetarian.
The key to a good fried rice is the rice! It has to be a day old and not fresh rice because the fresh rice can end up mushy. So this recipe is great for leftover rice. I didn’t have regular white rice so I used brown basmati rice. You can either use regular white jasmine or white basmati rice.
I added hot dogs in here and that could be why the kids like it! Also, make sure you have everything chopped and ready because once you start cooking the process is pretty quick. For my sauces I have used low sodium soy sauce, oyster sauce and fish sauce. If you don’t have access to oyster and fish sauce, you can omit these because honestly the soy sauce alone is flavorful.

Serves – 4
Day old rice – 4 cups
Hot dogs – 2 cups chopped
Eggs – 4
Onion – 1 small
Red/yellow pepper – 1 chopped
Green onions – 6 stalks chopped
Garlic – 5 crushed and chopped finely
Ginger – 1 Inch crushed and chopped finely
Frozen carrots and peas – 2 cups
Low sodium Soy sauce – 4 Tablespoon (if you only have regular soy sauce I would cut this in half as the hot dogs have sodium too.)
Oyster sauce – 1 Tablespoon
Fish sauce – 1/2 Tablespoon
Oil – 4 tablespoons
A pinch of Salt for the scrambled eggs
Firstly we are going to go ahead and scramble our eggs and keep that aside. Make sure you season your eggs with a bit of salt. I would suggest using a large enough pan/wok to be able to stir fry the rice. You will also cook using medium high heat because you don’t want a lot of liquid just hanging around the pan.
In the same pan, heat some more oil and add the onion, peppers, garlic and ginger. Fry this for about 2 minutes.
Now add the hot dogs, frozen vegetables and your sauces and stir fry it for another 2 minutes.
Next add the green onions and stir fry again for another minute.
You can add your rice into this mixture and stir fry that till the grains are fully coated and the liquids are fully absorbed.
After you are able to see very minimal liquid and the grains separating, add the scrambled eggs and stir fry for another minute.
Turn the heat off and let the rice cool slightly. It will continue to absorb some of the liquids. And there you go, there is your simple fried rice! You can always play around with this recipe, for example, add shrimp for a new spin. Let me know if you try it and how your kids took to it.
